Scamorza is a Southern Italian cow's milk cheese that is strung up and hung to dry for 1-2 weeks, giving it a unique pear shape. You can find different versions at the local cheese shop - plain with a bright white exterior (scamorza bianca), or smoked with a toasty brown exterior (scamorza affumicate)....now, you can have THIS version in your kitchen!
