Did you know that mortadella is believed to be one of the oldest charcuterie products in Europe, with a history that dates back to ancient Rome? The original version of mortadella was made with pork meat, flavored with spices such as cinnamon and coriander, and then stuffed into a casing and slow-cooked in a wood-fired oven. Today, mortadella is still made using a similar process, although the ingredients and flavorings can vary depending on the region in which it is made. In fact, the Italian city of Bologna is particularly famous for its mortadella, which is often referred to as "Bologna sausage" in the United States.
